Chapati or flat bread or tortillas are basically the same thing.  Usually they are prepared on a hot griddle or skillet but they can be baked in the oven.Whole Wheat Chapati1 cup unbleached white flour1 cup wheat flour1/2 tsp salt 2 tbs oil3/4-1 cup hot water1/4 cup fermented sprouted wheat berries (optional)Wisk together dry ingredients.Add oil and as much water as you need.Mix all together until a smooth dough. Turn out and knead on floured board until smooth and elastic.Divide in to 8-10 balls and let stand for 1/2 hour or more. The longer the dough stands the fluffier the chapati will be. Letting the dough stand makes it easier to roll, too. Overnight in the fridge makes them bend to your will like... Well, like a well rested dough.When you are ready to cook them preheat oven to 350F Roll dough balls on floured board with hands or rolling pin to about 8" circles.Bake 10 minutes or less on each side until cooked but not crisp.Baked sprouted wheat chapati with adzuki salad and roasted pepper/garlic hummus.This one has fermented cashew sour cream on it, too.Go Vegan NOW!!
